Lemon Meringue Diced Mango Pie
This months Daring Bakers challenge is lemon meringue pie. This has been one of my all time favorite desserts since i was young. It was great to get a chance to make it for myself. I added some diced ripe mangoes steeped in lemon juice to the lemon curd.I think this gave it an extra kick to this sassy lemon meringue pie!

MIxed Berries Shortcake
This cake I spent the whole afternoon making for mum's 60th bday party.It was a great celebration at Lord Jim's( Oriental hotel) wonderful food and the best of company.
This cake is a variation to my strawberry shortcake. Much more special with tons of blueberries, raspberries, strawberries hidden in all its three layers. Happy Birthday Mum!!!
Chocolate Banana Custard Tart
I've been hooked on making tarts , pies, quiches for the past few months. I love the way you make pastry from scratch it either becomes a great dessert or savory dish. This tart was surprisingly easy to make it has bananas on cocoa dough and chocolate custard baked together and topped with whipped/ sour cream. Yummy end to a good dinner.Raspberries wouldve also made a delicious tart....
Pavlovas
This was my first time making Pavlovas. I decided to make them individually sized instead of one huge serving.Delicious, light and airy. Pavlovas are a great Australian invention made for the Russian ballerina Anna Pavlova on one of her visits to Australia.It has since become an easy and low cal dessert ( low fat whipped cream) to make.There are also many variations with the fruits and sauces that we can decorate on top of this dessert.
