Fudge Cupcakes




My experiment today was fudge cupcakes. I personally prefer them most since im a chocolate person. They taste very chocolately but not too sweet since i mixed ritter milk and dark lindt chocolate together for the fudge frosting.
Im so in love with my new cupcake stand.
Hubby was so nice he went shopping at Harrods and bought it for me as a surprise. Im such a sucker for cupcakes...I think i should broaden my baking horizons and start trying new recipes from my cook books soon!!!

Fruit Fool






Cupcakes with fruits....lots of them actually. I chopped kiwis,mangoes, passionfruit and tangerines into the batter and also the buttercream.. Refreshing taste, very light and fruity. Next time i will definitely mix more fruit into the batter chopping them into bigger and chunkier pieces.

Chunky Brownies Cheesecake









Thank you to smitten kitchen and her lovely blog where i found inspiration to bake the most intensely delicious cheesecake.It is terrific! I will definitely bake this over and over again. I adjusted the recipe adding 3 tbsp of cornflour and 2 cups of whipped cream folded into the creamcheese batter to lighten the cheesecake,since i found the original recipe abit too dense for my taste. The chunks of brownies folded onto the batter is to die for!!!This cheesecake is definitely a keeper. ( add more brownies is also another option noted for next time)

Apricot & Brandy Mascarpone








Today I had this craving for something sweet....searched around in the internet and found this wonderful recipe for peach cupcakes which i adapted to apricots( cuz I like them more) and added some brandy to the cream and marscapone frosting.It's soo good....I feel naughty though for eating three in a row!!

Chocolate Mousse Fudge Cake



Had an order today for a bday
cake...I really had alot of fun tried out three different frostings in one cake...Pasted the bottom layer with vanilla whipped cream, the second with chocolate ganache and third with chocolate mousse.To finish it off i frosted the cake with a layer of choc mousse and chocolate ganache mixed together.I think the fun in baking is creating a new cake everyday! Just like mixing and matching ( hope this combination's a hit!)

Hubby's Bday




Today is hubby's 34th bday!Made strawberries and whipped cream cake...everyone enjoyed eating it esp my hubby...picked off the strawberries from the cake and finished them all off one by one...I love this recipe since the frosting is a combination of vanilla,creamcheese and fresh whipped cream...will definitely make another one for next year's bday!

Out of the two recipes the vanilla/chocolate swirl came out tasting absolutedly divine...it was so simple to make and used only two eggs not like the chocolate cheesecake which used 5...Im such a cheesecake addict now. Perused diff bookstores and found three brillant cheesecake cook books..will be trying out the recipes one at a time!Will post the recipes soon!

Three milks is a cake which is very moist and milky... since it is drenched in three different milks then frosted with vanilla whipped cream. I tried making this cake today using a recipe i found last night online...it came out pretty darn good... ( u can see in the picture that the milk is still seeping thru the cake!)I collected all together four recipes for this cake will post the others as i try them out!
TRES LECHES CAKE (Three Milks Cake)
MAKES: 15 servings PREP: 10 minutes BAKE: 30 minutes CHILL: 4 hours
1 medium speed with an electric mixer until fluffy; mix in eggs and 1/2 teaspoon vanilla. Combine flour and baking powder; add gradually to bu/2 cup unsalted butter1 cup sugar5 large eggs1 teaspoon vanilla extract, divided1 1/2 cups all-purpose flour1 1/2 teaspoons baking powder 1 cup milk1 (14-ounce) can sweetened condensed milk1 (12-ounce) can evaporated milk1 1/2 cups whipping cream1/4 cup powdered sugar
1. Preheat oven to 350°. Grease and flour a 13- by 9-inch baking dish.
2. Beat butter and sugar attter mixture, stirring to blend. Pour batter into prepared dish, and bake at 350° for 30 minutes or until wooden pick inserted in center comes out clean. Pierce cake with a fork all over.
3. Combine the 3 milks, and pour on top of cake; cool to room temperature. Cover and refrigerate until well chilled, at least 4 hours or overnight. 4. Beat whipping cream, powdered sugar, and remaining vanilla at medium-high speed with an electric mixer until thick; spread over cake, and serve.

Special Order

Had a special order from a friend today...who wanted something special for a friend's birthday. I made her a batch of Lemon cupcakes with Pink Lemonade swiss buttercream frosting....Hope her friend likes them!!!

Tonight I decided to try Magnolia's Vanilla cupcake recipe....It turned out pretty good... I seperated the butter cream frosting into many flavours.... Yellow Buttercup (Milk and butter flavoring), white/blue (peppermint cream),Creme de menthe( green mint flavoring with choc chips)..they all tasted great with the vanilla base cupcake....Another day of great baking after I made it all the way across town today to Sampeng, to buy these gold paper foil cups...I just had to try them out!!!!!
